Delicious Cheesy Baked Potato Soup

  1. 6-8 medium potatoes (baked or boiled and cubed)
  2. 10 bacon strips (1 pkg) cooked and crumbled
  3. ½ C butter
  4. ½ C flour
  5. 2 tsp. Chicken bullion
  6. Salt & pepper to taste
  7. 1 tsp. minced garlic (or garlic powder)
  8. about 10 C. Finney Farm Raw Milk
  9. Shredded Finney Farm Happy Jack Cheese
  10. Fresh chives
  1. Bake or boil the potatoes, cube them, then set aside. (Using the skin is optional)
  2. Cook and crumbled the bacon, then set it aside.
  3. In a stock pot, melt the butter on low heat.
  4. In a small mixing bowl, mix together the flour, chicken bullion, salt & pepper, and garlic powder (if used).
  5. Using a whisk, stir the flour and seasonings into the melted butter and start to add the milk slowly, mixing evenly. Gradually add all of the milk and turn the heat up to medium. Using a rubber spatula to rub the bottom of the pan, continue to stir and bring it to a boil. Cook and stir another 2 mins or until it thickens some. Remove from heat and add the Potatoes and Bacon to the soup.
  6. Shredded Finney Farm Cheese goes on top in your bowl. Garnish with fresh chives.
  1. Recommendation: Trim the fat off the bacon for a leaner dish.
  2. Tip: Add a can of corn for a twist on the flavor.
  3. Excellent Substitutions: Feel free to substitute any of your favorite Finney Farm Cheeses such as Finney Farm Pepperjack Cheese or Finney Farm Habanero Cheddar.
